December at The Corson Building

December 7, 2011
Dear Friends,

Elizabeth David, British mid-century writer, in her introduction to French Country Cooking, wrote about the people for whom she collected and published her recipes – “town dwellers, who take trouble over their marketing, choose their meat and fish carefully and keep a good store cupboard.” For these people she wrote a book of “cookery which uses raw materials to the greatest advantage without going to the absurd lengths of the complicated and so-called Haute Cuisine.” Because there was a need, a desire, a passion, a book was born.  A woman in our community also had a desire and commitment to connect people and books.  Kim Ricketts wanted to weave ideas into daily life through books, education, and gathering.  She brought them to us through the Cooks & Books Series before passing away earlier this year.  Rickett’s partner, Lara Hamiliton, has continued that legacy and ensured Kim’s desire for us “town dwellers” to have books for our cupboard by opening The Book Larder.

Join The Corson Building chefs Matthew Dillon and Emily Crawford along with Jason French, chef and owner of Portland’s Ned Ludd at The Corson Building on Wednesday, December 14th to honor two amazing women with a non “technicolor cooking” meal. Inspired by Kim and Elizabeth, we will create “Good cooking… honest, sincere and simple.” Dinner is $50 a person exclusive of wine, tax and gratuity. Reservations will be taken from 6pm-10pm. Please email info@thecorsonbuilding.com or phone us at 206.762.3330 to reserve a seat.

We hope this holiday season, like Elizabeth David you “actually and positively enjoy the labour involved in entertaining friends and providing families with first class food.”

We know we do and we wish you well,

The Corson Family

There are many celebrations and festivals associated with the olive tree and its fruit. In Italy, the tasting of freshly pressed olive oil is an annual tradition.  These young oils, Olio Nuovo in the north of Italy and Olio Novello in the south, are vibrant green in color, with viscous silken texture.  This is extra virgin olive oil in its most intense state, bottled immediately after pressing and not allowed to settle.
Please join us, Rene Erickson, chef/owner of Boat Street Cafe and Walrus and the Carpenter, and Jeffery Bergman, olive oil sommelier from Manicaretti Imports for an Olio Nuovo and Olio Novello tasting on Sunday, December 18th.
We will have two seatings – 10:30 and 12:30.
Cost is $35 for Olio Nuovo and Olio Novello tasting
and brunch (coffee and juice included)
We have a limited capacity of  20 guests at each tasting.  Please email – info@thecorsonbuilding.com or call – 206.762.3330
for reservations.

Bar Ferdinand Coffee Maker now open.
Serving simple espresso drinks with Stumptown coffee.  Pastries baked fresh daily except Mondays:  Croissants, Kouign amann (a traditional Breton pastry baked with sugar, butter and sea salt), Canelés de Bordeaux (a bordelais pastry baked in copper bee’s wax-rubbed cups, creating a beautiful caramelized shell surrounding an almost custard center…yes, that’s right!)
Coffee bar open daily from 8am, sharing space with Bar Ferdinand Wine Bar & Bottle Shop.  Speaking of which, we will be offering a tasting of Grower Champagnes in the bar this Sunday, December 4, from 2-4pm.  Tasting is free.
